Buttermilk Pancakes

- 480ml buttermilk
- 2 large eggs
- 60ml light olive oil
- ½ teaspoon salt, optional
- 50g granulated sugar
- 125g all-purpose flour
- 120g whole wheat flour
- ½ teaspoon baking soda
- 2 ¼ teaspoons baking powder
Method
Place buttermilk, eggs, oil, salt (optional), and sugar into the Vitamix container and secure lid.
Start the blender on its lowest speed, then quickly increase to Variable 5. Blend for 10 seconds, using the tamper to push ingredients toward the blades.
Remove the lid plug, add flours, baking soda, and baking powder. Replace lid plug and blend for an additional 20–25 seconds, using the tamper until mixture is combined.
Let batter sit 5 to 10 minutes before cooking to yield best texture and flavor. Pour 30–60 ml batter onto a hot, prepared griddle and cook till golden brown on each side.
