- 345g unsalted butter (or vegan butter), softened
- 2 garlic cloves, peeled and crushed
- Kosher salt, optional (a pinch)
- Ground black pepper (a pinch)
- Fresh parsley leaves (a small handful)
- Fresh thyme leaves, stemmed
- Fresh chives, chopped
Method
Place softened butter, crushed garlic, salt (if using) and pepper into the Vitamix container in the order listed and secure the lid.
Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
Remove the lid and add the fresh herbs. Secure the lid and start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 10–15 seconds, using the tamper to push ingredients toward the blades.
To make pats or slices of compound butter: Place butter onto a large piece of plastic wrap and wrap tightly, forming into the shape of a log. Chill in the refrigerator until firm. When ready to serve, unwrap the butter log and use a knife to slice into thin pats. Serve with meat, seafood, potatoes, bread, etc.!
Vitamix Tips
- Store garlic herb butter in an airtight container in the refrigerator for up to 10 days or freeze for up to 3 months. (Ice cube trays are great for portion control!)
