Minestrone Soup
With any combination of leafy greens, vegetables and beans, this beloved Italian favourite can be thrown together with whatever is in your cupboard. Ours includes corn, courgette, carrot, chickpeas and kidney beans.

Ingredients
- For the Soup Base -
- 2 cups (480 ml) vegetable broth
- 4 large (240 g) plum tomatoes
- 1 garlic clove, peeled
- ½ medium (40 g) carrot
- ½ small (80 g) onion, peeled
- ½ each (50 g) celery stalk
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
- 2 Tablespoons tomato paste
- Add-In Ingredients -
- ½ cup (75 g) chickpeas, drained
- ½ medium (100 g) corgette
- 1 cup (150 g) kidney or cannellini beans, drained
- ½ cup (100 g) sweetcorn
- ½ cup (50 g) pecorino romano, grated
Method
Place all soup base ingredients into the Vitamix container in the order listed and secure the lid. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds. Reduce speed to Variable 2 and remove lid plug. Add chickpeas, courgette, kidney beans, corn, and cheese through the opening. Secure lid plug. Blend for an additional 10 seconds. Serve immediately.
